Microwave Baking

I've done a little in the past, syrup sponge pudding and coconut squares, but nothing major as it's quite a different method to cooking them in a conventional oven.
Well at a charity shop yesterday I picked up Microwave Baking by Judith Ferguson and today I made Banana Coconut Bread.

Yummy, 5 minutes to whizz together in food processor, 8 minutes on medium, 5 on high and then a finall 2 minutes on high and it was done. No oven preheating either.
